what is spent grain? Brewers use malted grains (barley and wheat mostly) to make beer. After they boil them in a certain process the wet grains are called spent and they are of no use for the brewers. This beautiful mixture looks like porridge and its nutritionally rich (high on fiber/vitamin/protein and more). They are truly wonderful added in bread and I had been obsessing about them - so happy to source them fresh from a brewery.
Besides their nutritional value they give a full, hearty, malty flavor to the bread. They release moisture and the crumb is a bit denser and the crust a bit darker.
