Olive/polenta

Polenta and olives has been capturing the baking world over the last year.  It is widely paired with olives and fresh rosemary - I add a bit of lemon zest/juice too. Polenta gives added texture, and the olives marinade adds depth of flavor. Rosemary is the secret gem!
The polenta brings a subtle sweetness that perfectly compliments the salt and acidity of the olives and makes the loaf’s crust and crumb softer.
