Barley/ww

Barley is extremely low in gluten hence tricky to bake with, but it makes a great choice for our healthier nutrition. 

It’s rich in many nutrients and packs some impressive health benefits, ranging from improved digestion and weight loss to lower cholesterol levels and a healthier heart. Its flavor is totally earthy and unique.

I am blending a wonderful mixture of high percentage barley and wholewheat along with in a mixture of wheat and some freshly milled lightly malted crushed barley grains. The crust is not overly crunchy and the crumb is beautifully soft and moist (not wet). 

Ingredients: organic wheat, barley, wholewheat, sourdough, water, akamas sea salt, barley malts a tiny bit of olive oil and honey

(No dairy/no nuts/no yeast - long fermentation )
