Organic Einkorn flour is back in stock!

A very distinct unique flavor and supposedly the first wheat known to man! Very low in gluten makes it very tricky to work with. Slightly less rise than my other loaves but a truly gorgeous everyday loaf. 

ingredients:  organic einkorn and wheat, sourdough, akamas salt and water

Einkorn (German for “one-kernel” in reference to its single-grain-per-spikelet trait) is the earliest form of cultivated wheat, dating back about 10,000 years and also allegedly found in the tombs of ancient Egypt. Not widely cultivated, It is unique in flavor, nutritional benefits and genetic makeup. Where modern wheat has 42 chromosomes, Einkorn has only 14.
